Amanda’s Summer Salad Recipe:
Ingredients:
– 500g cooked Prawns
– Handful of Snow Peas, raw and cut lengthways
– Red and Green Capsicum, cut lengthways into bite-sized pieces
– 1/2 Red Onion, sliced thinly
– 1/2 Cucumber, sliced thinly
– 8 Cherry Tomatoes, sliced in half
– 1 Orange (or Mango)
– 1 Avocado
– Your choice of lettuce, spinach, or rocket as the base
Dressing:
– Squeeze of lemon
– 1/2 Tbsp Olive Oil
– Pepper to taste
Instructions:
– Add all ingredients in a bowl.
– Mix together
– Enjoy!
