SPOOKY SEASON IS HERE – HALLOWEEN RECIPES


Halloween is just around the corner! Let’s celebrate it together by using our famous Kyäni products in a much different way!

We present you 3 awesome easy&fast Halloween recipes using Kyäni ingredients! Try them all and impress yourself or your guests with these treats!

Do you like preparing single-serve desserts? Then this first recipe is just made for you!

1- PROTEIN PUMPKIN MUG CAKE

Ingredients

  • 2 tablespoons gluten-free oat flour
  • 2 tablespoons plant-based Kyäni Origin Vanilla
  • 1/2 teaspoons baking powder
  • 2 tablespoons pumpkin, canned
  • 3 tablespoons almond milk
  • Pumpkin Spice Syrup, to taste [or 1/4 teaspoon pumpkin pie spice]
  • sweetener, if needed
  • 1 teaspoon almond butter

Preparation:

  1. In a large microwave-safe mug, mix together all ingredients except for almond butter. Drop almond butter on top of the batter. Shake the mug slightly to allow it to settle into the centre of the batter.
  2. Microwave cake for 60 seconds, watching so it doesn’t boil over. If the cake is still wet on top, microwave for 10 more seconds.
  3. Top with vegan whipped cream & more cinnamon. Devour!

2- SWEET POTATO PANCAKES

Ingredients

  • 1 large sweet potato (to yield 3/4 cup, mashed), cooked
  • 1 cup egg whites
  • 1/4 cup Kyäni FIT20
  • 1/4 cup flaxseed meal
  • 2 teaspoon baking powder
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon coconut oil, for cooking
  • chopped raw pecans, for garnish
  • pure maple syrup, for serving

Preparation:

  1. In a blender, add all the ingredients except for the coconut oil.
  2. Blend this until very smooth.
  3. To cook these sweet potato protein pancakes, heat a skillet or griddle over medium to medium-high heat and melt a little coconut oil. You could also use some organic, grass-fed butter.
  4. Once the oil is melted, pour about 1/3 of a cup of the batter onto the hot griddle. This will make approximately 4 pancakes, which is what we prefer in our house.
  5. Cook the pancake for 2-4 minutes, until the edges begin to turn from shiny to dull and bubbles appear in the centre of that pancake.
  6. Flip using a spatula and cook an additional 2-3 minutes, or until golden brown and cooked through.
  7. Repeat with the remaining batter.
  8. To serve, you can top it with some chopped raw pecans and drizzle with pure maple syrup.

3- HOMEMADE GRANOLA BARS

Ingredients:

  • Rolled Oats: Sprouted or just regular rolled oats! Make sure they’re gluten-free if needed.
  • Dates – this helps bind these no-bake granola bars together. 
  • Peanuts
  • Peanut Butter: Chunky or smooth
  • Pea Protein Powder: You can use Kyäni FIT20/Kyäni Origin Chocolate
  • Chocolate Chips
  • Sea Salt
  • Cinnamon
  • Vanilla Extract

You can also put some pureed pumpkins for the Halloween spirit!

Preparation:

  1. Start by making sure that your dates are soaked and soft before beginning to make the bars. This allows the dates to be pureed much smoother and ultimately binds the granola bars together much easier. You just need to soak them in some hot water for 10 minutes. 
  2. Mix the oats and peanuts together on a baking sheet and sprinkle with cinnamon and sea salt. Then place in the oven to bake for a few minutes to bring out that toasty aroma!
  3. Puree the dates in a food processor while the oats cool. Add in the peanut butter, pea protein, and vanilla extract, and puree again until smooth.
  4. Add the oats and peanut butter date combo into a large bowl and mash it all together with your hands. Let the granola batter cool before folding in the chocolate chips
  5. Once the chocolate chips are mixed in, press the granola batter into a baking pan lined with parchment paper, and place into the freezer.
  6. When they’re set, remove the peanut butter granola bars from the freezer and slice them!
