Core140+ Moist and Delicious Chocolate Chip Banana Bread

Ingredients
- 1 cup all-purpose flour
- 1/2 cup Core140+
- 1 tbsp dutch process cacao powder
- 1 tsp baking soda
- 1/2 tsp sea salt
- 3 large ripe bananas (~1.5 cups mashed)
- 1/4 cup melted unsalted butter
- 1/4 cup vegetable oil
- 1/2 cup packed dark brown sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 1 cup semi-sweet chocolate chips, divided
Instructions
- Pre-heat your oven and grease a 9 x 5-inch loaf pan with butter.
- In a medium bowl, whisk together the flour, Core140+, cocoa powder, baking soda, and sea salt. Set aside.
- In a large bowl, mash the ripe bananas with a fork. Add the melted butter and oil and stir until combined. Stir in the dark brown sugar, egg, and vanilla extract. Stir until smooth.
- Fold in the dry ingredients but don’t over mix. Fold in 3/4 cup of the semi-sweet chocolate chips.
- Pour the mixture into a greased loaf pan and sprinkle the top with remaining chocolate chips. Bake in preheated oven for 45-50min or until a toothpick inserted into the center of the bread comes out mostly clean. Oven times may vary.
